Beat, Roll & Stuff Chicken Breasts Jan 27 2009 Ingredients 3-4 chicken breasts, pounded thin and seasoned with season-all 5-6 oz spicy Italian sausage 1/2 cup diced onion 1-2 cloves minced garlic Crushed red pepper (about 2 teaspoons) 1 cup dry stuffing mix 1/2 cup hot water 2 cups frozen chopped spinach, thawed and squeezed dry 1/4 cup sour cream 1/2 cup shredded mozzarella cheese, plus extra for topping Directions Preheat the oven to 400 F. Pound the chicken breasts between plastic wrap until thin, season with season-all, and set aside. Brown the sausage with the onion, garlic, and crushed red pepper. Stir the stuffing mix and hot water into the sausage mixture and let it sit to absorb. Fold in the spinach, sour cream, and 1/2 cup mozzarella. Divide the filling among the chicken breasts, roll tightly, secure if needed, and place seam-side down in a non-stick pan.
