Happy New Years! This past year we did chocolate fondue for dessert and it has now become a favorite of my kids … they live for Fondue’ing. It’s not really a recipe, just a fun reminder of all the good things you can dip into melted chocolate – tested and approved!
In fondue pot, melt chocolate wafers – I prefer milk chocolate. Melt and stir constantly until smooth.

Graham Crackers
Apples
Bananas
Mangoes
Strawberries
Marshmallows
Rice Krispy Treats
To do the best Double Dip, don’t forget to put out:
Nut mix – my favs are cashews, peanuts and almonds. All lightly salted of course.
Peanut butter
Jams – my favorite is Raspberry.
This can be cooked in the oven on Broil Hi or on the grill. Grill sides are some of my favorites, the smoke brings out a wonderful flavor in veggies and beans when done that way.
1 lb. salmon
1 tsp. dried oregano
2 cloves of garlic, minced
Salt & Pepper
1 tomato sliced thin
1 tbsp. vegetable oil
1/4 c. bread crumbs
1/4 onion sliced thin
In pan (or on tinfoil if doing on grill), place salmon and rub in the garlic. Sprinkle with oregano, salt and pepper. Layer with tomato, onion and the parsley. Mix bread crumbs with oil and sprinkle on top.
Baked at 450 for 8-10 minutes or until fish is flaky
On grill, cook for 8-10 minutes or until fish is flaky. Cover up fish with tinfoil.

I use this in my turkeys, roasted chickens, and just as a side. If you want it as a side dish, cook at 450 degrees for about 10 minutes or until the top is a little crunchy.
Saute celery, onions and pepper in butter until tender. Stir in sage and salt and pepper.

In mixing bowl pour mixture over croutons and stir. Gradually add water and stir. You do not want it to be too wet, so go slow on the water and stir well in between, you’ll be surprised how much water a crouton can soak.
Stuff into bird or spray glass pie pan (works the best) and bake at 450 degrees.

Preheat Oven to 375
1/2 c. bread crumbs
2 tbsp. parmesan cheese
1 tsp. basil
1 tsp. oregano
1/2 tsp. garlic powder
2/3 c. melted butter
1/4 c. white wine
1/4 c. onion
1/4 c. parsley
Combine first five ingredients and coat chicken. (Roll breasts in butter and then coat with mixture. For a healthier option, you can use skim milk in place of butter). Spray baking pan and put chicken breasts in oven. Bake for 50-60 minutes.
In separate pan, saute onion in butter, add wine and parsley. Cook until onion is tender. In the last five minutes of the chicken cooking, pull out and add onion topping.
The smell this creates is wonderful!
This is a great cheese sauce to put over the top of broccoli or cauliflower .. my mother tried this trick with me and it didn’t work. Seems to on less brattier kids… and Dads LOVE it!
This makes a lot so I tend to cut it in half or even quarters. Quarter-half covers four veggie eaters and then some.
3 tbsp. butter
3 tbsp. flour
1/2 tsp. salt
1/4 tsp. pepper
1 1/2 c. milk
1 c. cheddar cheese
Whisk butter and flour over heat and mix well. Add remaining ingredients. Bring to a boil and reduce heat and simmer for five minutes, stir occasionally.
1 lb. ground beef
2 garlic cloves
2 tbs. parsley
Salt & Pepper
1 egg
2 tbs. parmesan cheese
1 c. bread crumbs
1/2 c. water
Put ingredients into bowl and mix thoroughly. Make into equal size balls (I prefer five large meatballs) and drop into cooking spaghetti sauce. They can remain in there until dinner is ready to be served.
1 avacado
Diced onion
1 garlic clove
1/4 diced tomato
Spoonful of sour cream
1/4 fresh lemon
1/2 fresh lime
Salt
Pepper
Spoonful of salsa
Cilantro
Mash avacado in bowl to desired smoothness. Add remaining ingredients and stir well. Put in fridge at least 10 minutes prior to serving.

1 tsp. salt
1 tsp. chili powder
1/2 tsp. corn starch
1/2 tsp. crushed red pepper
1/4 tsp. dried oregano
1/2 tsp. cumin
Use it for tonight’s meal or add ingredients into Ziploc bag and shake and store. Will last forever.

1 lb. ground beef
2 cloves garlic, minced
1/2 c. diced onions
Taco Seasoning
3/4 c. water
Cook beef, onions and garlic in pan until ground beef is brown and crumbly. Mix in seasoning mix and add water. Bring to boil, turn heat to low and simmer for 10 minutes.
Serve with fresh guacamole!

6 hard boiled eggs
1/4 c. mayonaise
3/4 tbsp. mustard
Tiny bit of horseradish
Salt
Pepper
Paprika
Peel the shell of eggs and cut eggs in half. Take out hard yokes and put into mixing bowl. Mash up with fork and add everything but the paprika. Mix together well, spoon mixture into egg whites and sprinkle paprika on top.
